Appetizer of roasted eggplant, chickpeas and beet
Lenten dish. Each component of this recipe is good by itself, together constitute an interesting and tasty snack. Happy to offer a recipe.

Ingredients

  • Eggplant

    1 piece

  • Chickpeas

    1 cup

  • Beets

    1 cup

  • Vegetable oil

    4 Tbsp

  • Garlic

    1 tooth

  • Parsley

    0.5 coup

  • Cilantro

    0.5 coup

  • Salt

  • Turmeric

    0.5 tsp

Eggplant peel, cut cubes.

Fry in oil until done 7-8 minutes with salt and turmeric.

Add the chickpeas, simmer together about 3 minutes.

Add grated boiled beets, stir.

At the end of cooking add chopped greens and garlic.

The food is ready. Tasty and warm and cold.
