Cooking
The longest here is the fried eggplant. They need to be greased with olive oil and bake in the oven until tender, about 40 minutes. Temperature 200 gr. Once the eggplants are browned, the oven is not off. It should be hot.
While the eggplants bake, fry chopped onion and garlic until clear.
In a mixer, beat eggs, add flour and baking powder, tomato paste, salt, lemon juice and thyme.
Baked eggplant peel and cut into small cubes.
Now mix the eggplant with the eggs, add the chopped parsley. Again mix well.
Pour into a baking dish, sprinkle top grated cheese. Put into the oven for literally 10 minutes.
Take out and allow to cool for a few minutes.
