Meatballs with eggplant and zucchini
Very tender, tasty and unusual meatballs! Help yourself!

Ingredients

  • Eggplant

    2 piece

  • Zucchini

    2 piece

  • Onion

    1 piece

  • Garlic

    2 tooth

  • Cheese

    150 g

  • Flour

    7 Tbsp

  • Chicken egg

    2 piece

  • Dill

    0.5 coup

  • Salt

  • Black pepper

  • Vegetable oil

Cooking

Eggplant peel and boil until tender, drain in a colander, give drain water and grind.

Zucchini chopped( the skins I did not delete since I was young zucchini, if old-clear).

Connect the zucchini and eggplant, add the onion and garlic, grated on a fine grater. Cheese also add. There put the flour, eggs, salt, pepper and chopped dill.

All this mix well and form small balls with wet hands to prevent sticking.Roll them in flour, put in a pan with plenty of vegetable oil and fry on both sides until Golden brown.

Serve hot or cold, if you wish you can add stuffing. Bon appetit!
