Lenten cake with berry mousse
Sometimes a post may need to bake something festive. In this regard, I was interested in the recipe for vegetable custard sponge cake. Based on it was born this recipe. The cake is small, about six servings.

Ingredients

  • Cocoa powder

    4 Tbsp

  • Flour

    1.5 cup

  • Brown sugar

    160 g

  • Water

    200 ml

  • Vegetable oil

    0.25 cup

  • Vanilla

    1.5 g

  • Lemon juice

    1 Tbsp

  • Soda

    1 tsp

  • Spices

    0.25 Tbsp

  • Semolina

    40 g

  • Brown sugar

    50 g

  • Black currants

    150 g

  • Cherry

    100 g

  • Dark chocolate

    30 g

  • Water

    200 ml

Of deliveries "Mistral" in this recipe I used semolina and brown sugar, which I prefer to use in baking.

Sift the flour. Mix it with baking soda, cocoa, vanilla.

In boiling water to dissolve the sugar, spices, lemon juice, vegetable oil. Biscuit so called "custard" that the flour as if "sealed" in boiling water.

Pour into dry mixture and mix well. The batter is pretty thick plastic.

The form is better to take a "Bundt" (with a hole in the middle). Bake at 170 C for about 35-40 minutes, until dry splinter.

Ready cake cool and cut into three parts. The cake cut well, does not crumble.

From water and semolina, cook a thick porridge. Berries to turn into a puree. Berries, cereal and sugar mix into a creamy mousse. Mousse turns out twice more than required in a cake, but with fewer very inconvenient to bother, so the surplus was gladly eaten as a berry dessert.
