Pistachio ice cream with strawberry puree
What could be better than ice cream in the summer heat? Cool treat for kids and adults, and an amazing pistachio flavor with a strawberry sour - just bliss, and will especially appreciate this ice cream prepared by their own hands, it is not inferior to the store, and many say that even tastier.

Ingredients

  • Chicken egg

    2 piece

  • Sugar

    100 g

  • Milk

    250 ml

  • Starch

    1.5 Tbsp

  • Pistachios

    150 g

  • Cream

    300 ml

  • Powdered sugar

    100 g

  • Citric acid

    0.25 tsp

  • Strawberry

    1 cup

Pistachios grind in a blender or through a meat grinder. yolks separate from proteins and whisk in white foam with sugar, add the starch.

Prepare a water bath. Bring the milk until hot and, constantly whisking the yolks in a thin stream pour the hot milk. Put in a water bath.

and while stirring to thicken the mass to the state of sour cream. Cooling to room temperature, and then put into the freezer for 1 hour. To quickly cool the mass, I put in a bowl of cold water.

Strawberry to turn into a puree using a blender, add the powdered sugar, stir.

Cream whip. Beat the whites with the icing sugar and lemon until a stable foam. Pistachio ground to get out of the freezer, a little beat up and add to the whipped cream and mix with hand whisk.

Then add whipped whites, and manually mix into a homogeneous mass.

In a container pour a little of the pistachio mass in an arbitrary order for the spoon to spread strawberry puree and so on.

Then make a few random streaks handle of a spoon. Remove in the freezer for 4-5 hours minimum.

That's the same technology I have made a pecan (walnuts) with chocolate sauce. Has a rich nutty flavor, also very tasty.
