Almojabana with custard and dried apricots
Almojabana is a Spanish tortilla, which is prepared from choux pastry. The cake can be prepared as stuffed without it. In this recipe the cake is cooked with a filling of custard, prunes and dried apricots.

Ingredients

  • Butter

    100 g

  • Chicken egg

    2 piece

  • Flour

    1 cup

  • Water

    200 ml

  • Sesame

    0.5 tsp

  • Powdered sugar

  • Cream

    1 pack

  • Milk

    300 ml

  • Prunes

    30 g

  • Dried apricots

    30 g

Cooking

Heat the water and dissolve in it the butter.

Pour the flour and knead the dough. To cool the dough.

Add eggs and beat.

Dried apricots and prunes pour boiling water for 3 minutes, dry and finely chop.

Prepare the custard. Pour the dry mixture custard into a bowl and dilute it with 100 ml milk. 200 ml of milk to heat. Pour diluted in water cream in the milk and cook until thick state. Cool.

In warm cream add the apricots and prunes. Mix well.

Half the choux pastry to put on a layer of parchment paper. From top to distribute the filling.

The filling to cover the remaining batter. Sprinkle with sesame seeds.

Bake in the oven at 200 degrees for about 45 minutes. Warm cake sprinkle with powdered sugar to taste, cut into slices and serve with tea.
