Cooking
[b]First make the dough:[/b] the Chocolate and butter cut into pieces and melt in a water bath until a homogeneous mass. Add the cognac and mix well. Set aside to cool.
Separate the yolks from the whites. Beat egg yolks with honey until light yellow in color about 5 minutes.
Pour slightly cooled chocolate mass.
Add the flour, baking powder and ground nuts. All mix well.
Separately, beat egg whites with a pinch of salt, gradually adding sugar, to strong and stable foam.
To the chocolate mass carefully mix 1/3 of whipped egg whites and mix well. Gently add the remaining egg whites and mix until homogenous (No mixing - all by hand!)
[b]Bake the cake:[/b] Form to lay the paper and brush with oil. (I have a form 26 cm) Pour the batter into the pan and distribute evenly. Send in a preheated 180 degree oven for 30 minutes. # Readiness check with a toothpick in the center - the dough should not be liquid - only a wet baby. The main thing is not to overdry! The finished cake remove from the oven and allow 15-20 minutes to cool in pan.
[b]Frosting:[/b] On a water bath to melt the chocolate. Pour to it the cream and honey and stir until smooth. Add brandy and stir. Pour the cake icing and smear her side. Decorate as desired. Put into the refrigerator until fully cured. Before serving to hold for about 15 minutes in a warm room.
