Description
Want to offer for Breakfast sweet flour dish which will perfectly replace the usual eggs or pancakes. The dish is inspired by the traditional Austrian dessert Kaiserschmarrn, which will add variety to your usual menu, in addition, to make it quite easy to cope with it even the inexperienced housewife. According to historians, Kaiserschmarrn was one of the favorite dishes of the Emperor of Austria Franz Josef, which is different from the usual royals and did not perceive complex, "high cuisine". Kaiserschmarrn is, rather, a peasant dish that boasts a pleasant taste and a high degree of satiety. On the authenticity of the recipe I do not claim. Just suggest one of the variants of its preparation. Help yourself, it's delicious!

Cooking
Soak raisins in brandy or rum.
Plum wash, remove seeds and cut into slices. In a small pan add 3 tbsp water, 3 tbsp sugar, cinnamon and slices of plum.
Stir and cook until the caramelized plums.
Cook over medium heat until a thick syrup. If you hold the blade at the bottom of the pan, there must be some trace. I have it took 7-8 minutes. Remove from heat and allow to cool.
Proteins separated from the yolks. Yolks pour into a large bowl and add the sugar.
Yolks with sugar and beat well with a whisk until whitening.
Oat flakes grind in a coffee grinder. In the absence of the grinder, cereal pour the warm milk and leave to swell for 10-15 minutes.
To the yolks add the milk, salt. Mix well. Then add the flour, crushed cereal and raisins.
Separately, beat egg whites in a solid foam.
In two add the whites to the milk mixture.
Each time carefully stirring.
Heat a frying pan with a small amount of vegetable oil, pour half of the batter.
Fry on medium heat until the underside is lightly browned.
Carefully turn the pancake to the other side.
Then using a wooden spoon to divide the cake into 4 parts.
When the dough will seize, divide it by two blades on separate pieces. The pieces need to be exactly "ripped". Fry until Golden brown. Similarly bake the second pancake.
Kaiserschmarrn on a platter. Pour plum sauce.
Sprinkle with icing sugar and decorate with mint. Bon appetit!
