Cooking
Ham clean away the chaff and fat (if any), and cut into small pieces.
For the marinade I will use soy sauce Kikoman.
Onion, garlic and ginger to clear. Wash the herbs and dry.

Add soy sauce, mustard, honey and mix well.
Then pour the red wine and stir again.
Prepared marinade pour the chopped meat and leave in the refrigerator for at least 3 hours. (at night, more than marinated, the better)
In a deep pan or saucepan with a thick bottom pour vegetable oil and spread the meat with marinade. When boiled, lower fire and simmer the meat with the lid closed, until, until all the marinade has evaporated. Time is about 1H 15 minutes.
Then the lid open and stirring all the time, the meat and fry a little till Golden colour. Frequent stirring is necessary as the marinade, but rather is the sauce tends to burn. Try the meat to taste, if salt is not enough for You, then salt to taste. For my taste, have enough soy sauce.
The meat is soft, sour - sweet sauce with mild spiciness. Serve it with greens and pickled onions.
