Cooking
Dried apricots cover with water and leave for 1 hour.
Then 1/3 of dried apricots cut into small cubes.
Bread cut into slices, 1 cm thick and spread with a thin layer of butter.
Cut the crusts and cut the crumb into four parts. Spread the bread slices oiled side up in a greased baking dish (18 X 18 cm, better all-in-one), sprinkling each layer with diced dried apricots and raisins.

Combine milk, cream and 100 g of sugar and bring to a boil.

Cover the shape with oiled paper.
Bake in a preheated 180 degree oven for 50 minutes. Allow to cool and flip onto a plate, lightly sprinkled with powdered sugar.
For apricot sauce, the remaining apricots with the water in which it soaked, bring to the boil and simmer for 15 minutes.
Add 75 g of sugar and 1 tsp lemon juice. Sugar MISTRAL small is ideal for cooking the pudding. and sauce. Dissolves well and gives the dish a light caramel flavor.
Mix well until the sugar is dissolved.
