Finally, the last recipe (last for today), and I finish all of this delicious cake. Who devote our Netolicka (xsenia). She always looks so delicious and wonderful pastries. The cake turned out delicious, but a little sweet (for me), and my burst and saying that everything is okay. Dried fruits with the brandy gives it a really interesting flavor.

Cooking
First, take our dried fruits and nuts and pour their brandy. But I have photos of nuts there, because I made a small stupidity. I was nuts not chopped, and threw them into a blender... didn't look exposed, so they have me crushed, and pour them so crushed I didn't want. So I wrote ingredients - walnut-chopped!!! And leave alone for 2-3 hours. If the cake will eat small children, this procedure can and can not do.
Mix the flour, baking powder, salt, and all this to sift.
Mix the softened butter with 1 tbsp. sugar (I did this in a food processor) until smooth.
Then, still whisking, enter alternately the flour and milk. To enter gradually, to start and finish with flour. Same here, add 0.5 tsp almond essence (if it is not concentrated, and if concentrated, a few drops)
Now whisk 4 protein with 0.5 tbsp. of sugar until thick peaks.
Gently combine the dough with proteins. The dough comes out of the air.
Divide the dough into 3 parts and bake on a greased and floured (or covered with baking paper) form (I have a diameter of 21 cm). I baked 3 layers at once, because the test has proteins, and proteins for a long time it is not worth it. Bake at 150-180* until tender (I 30 minutes).
The finished cakes allow to cool slightly and remove the paper, if any. Then the cakes should be GOOD!!! to impregnate. Otherwise dry cakes spoil the cake. This can be done by any method: syrup (boil it with 1 tbsp. of sugar and 0.5 cups of water + almond essence), just liquor.
Now prepare the cream. In a pan put 2 tbsp. sugar + 1 tbsp. water, bring to a boil and cook on low heat for 10-15 minutes, stirring occasionally.
While the syrup is cooking, whisk in a thick foam 3 protein. The finished syrup (just with fire!!!) a thin trickle pour into proteins, while constantly continue to beat. And continue to beat for another couple minutes after the introduction of all syrup. We succeeded at the protein custard.
Divide the cream into two parts. One remains the same, and secondly, add our fruit-nut stuffing (pre-drain brandy) and stir.
Begin assembling the cake. On a dish put the first cake and cover with half of fruit and nut cream. The second cake on top, spread it to the rest of the half of the cream.
Then put the third Korzh and coat the cake top and sides with simple protein cream.
