Fried chicken from Marrakech
In one of the palaces of the Royal families in Marrakech is a huge hall specially for roasting chickens on a spit, twirling around each for 2 people - one turning the spit, and another watering the chickens with oil and spices.

Ingredients

  • Chicken

    2 kg

  • Green onions

    3 piece

  • Garlic

    1 tooth

  • Parsley

    1 Tbsp

  • Cilantro

    1 Tbsp

  • Salt

    1 tsp

  • Paprika sweet

    1 tsp

  • Cumin

    1 tsp

  • Peppers red hot chilli

    0.25 tsp

  • Butter

    60 g

Cooking

Herbs and spices, and mash in a mortar, combine with butter

Chicken cut into 4 pieces (if small, then each into 2 parts)

Grate the pieces of chickens this paste and leave for 1 hour

Fry have or outdoors on the grill. Or so on the grill in the oven. Below the grid I have dishes that will drip oil - this oil is necessary from time to time to water the chickens

Roast 30 minutes, flip (in the oven too flip). Nice Moroccan meal!
