Perhaps this is the most delicious cookie of the long-running. Well, who loves biscotti, do not need to tell you how delicious it is. Great to bake for a gift, which I often do. And pretty simple to prepare, but always bright and some festive.

Cooking
Mix the flour, sugar, baking powder and salt.
Mix separately eggs, 1 egg white, olive oil, vanilla and lemon zest.
Mix the dry and wet mixture. Stir until a homogeneous dense mass.
Add the cherries and pistachios. Mix well.
Divide the dough into two parts. On a floured working surface of each part roll into "sausages" approx length of 22-23 cm and a width of 7-8 cm.
To shift the "sausages" on the laid baking paper baking sheet. Each sausage, brush with beaten egg white. Bake in pre-heated to 180 degrees oven for 22 minutes or until Golden brown.
At the end of time received baked goods cool on a wire rack. Oven temperature decrease to 150 degrees.
Warm "sausages" cut into with a sharp knife on the diagonal into thick slices 1-1,5 cm
Lay the slices on a baking sheet (crusts trimmed side down) and bake for another 5 minutes to obtain dried, but still soft biscotti. Or 15 minutes if you want to get crispy biscotti. Cool the biscotti without removing from pans.
Such cookies can be stored in containers with a vacuum lid or metal boxes.
