Eggplant cut in half and fill with salted water.
Meanwhile, slice the onions and carrots and fry them in the pan, sprinkle with your favorite spices.
To shift the onions and carrots in a bowl, let cool slightly, add the chopped garlic, diced tomato and some green onions.
Heat the oil in a pan and fry the eggplant on both sides for 5 minutes.
When the eggplant has cooled, spoon out the flesh to make boats, and add it to the rest of the vegetables.
Vegetable mixture season with salt and pepper, mix well and fill it half of the eggplant.
Sprinkle with grated cheese and send in the oven for about 30 minutes.
