Loin with pears, apples and aromatic herbs

Ingredients

  • Loin

    1.7 kg

  • Pear

    2 piece

  • Apple

    6 piece

  • Bacon

    200 g

  • Thyme

  • Rosemary

  • Bay leaf

    5 piece

  • Dry white wine

    0.5 cup

  • Mustard

    1 Tbsp

  • Vinegar

    1 Tbsp

  • Honey

    1 tsp

  • Salt

  • Black pepper

Cut into the meat between the ribs. Season with salt and pepper, sprinkle with dried herbs.

Pear slice thickness of 1 cm, and inserted into cuts of meat.

Pork wrap a strip of bacon,leaving the naked ribs and slices of pear. Tie the meat with string, pushing the bacon. Put in a baking dish and send in a heated oven to 180 gr. for 10 minutes.

Pour the meat with wine, close foil, and bake for another 1 hour. Remove the foil, add the apples, and bake for another 20 minutes.

To remove the meat from the oven, put on a dish and surround with apples. In the form of mix remaining juice, mustard, vinegar and honey. Boil for 5 minutes. Pour into gravy boat and serve with meat.
