Zucchini stewed in tomatoes
I love zucchini and eggplant in any form.. I'm Sure many do this way... but still want to show one of their options... Quickly... without too much hassle.. and of course Tasty)))

Ingredients

  • Zucchini

  • Carrots

  • Onion

  • Tomatoes in own juice

    1 can

  • Greens

  • Garlic

  • Spices

Carrots cut into slices thickness of 2-3...uh...chop the onion...and sauté the carrots and onions until Golden brown in vegetable oil. Zucchini cut into slices..add to the carrot...fry all together for 3 minutes

Add tomatoes in their own juice...(you Can substitute fresh...and tomato paste...but if you compare the taste..it tastes better with canned..)))))...finely chop the garlic...salt..pepper...

Cover with a lid and simmer on medium heat for 15 minutes..(If gustavito add a little water..Then add chopped greens and simmer another 5 minutes...Bon Appetit!!!!!
