Cooking
Boil down the wine to two tablespoons, remove from heat, add the tomato paste, leaves 1 thyme sprigs, butter and a pinch of salt. Cool slightly.
With fingers gently separate skin of chicken from the carcass in the area of the breast and the thighs. Distribute 3/4 of all the wine-oil mixture under the skin. Inside the chicken put the thyme, Basil and garlic.
From above to cover with the remaining wine and oil mixture. Put in sauce pan and leave for 30 minutes.
Preheat the oven to 200 degrees and bake for about 1 hour, removing excess marinade. The skin is not burnt, cover the top with foil.
Cut the chicken into pieces and serve right in the pan. Bon appetit!
