For me the combination "fish with eggplant" brand new, never tried to cook them together. Here is wanted quickly without much hassle to cook delicious and healthy dinner. The combination of products was born on the move, it was very tasty.

Cooking
Eggplant cut into slices, to prisolit and set aside.
Fish cut into pieces, prisolit and pepper to taste.
Wash the eggplant from the salt. At the bottom of the refractory form to put the fish on top layer of eggplant. Eggplant sprinkle with dried Basil and drizzle with olive oil.
Next, layer chopped pieces of pepper, add sliced thin slices of garlic. To prisolit.
The last layer is the tomatoes, cut into slices. Season with salt and pepper and send to the preheated oven. Vegetables provide juice in which the fish is cooked.
When the fish turn white and the vegetables are soft when piercing, the dish is ready, you can get.
You can do without garnish, and serve with baked potatoes. I have potatoes prepared simultaneously with the fish. As you can see, the minimum of hassle!
