Eggplant fried eggs with olives
Offer you one of the variants of the lung, diet and delicious Breakfast or dinner, which will be useful for those who are watching their weight and also for a vegan diet (which allowed the use of eggs). Be beautiful and healthy!

Ingredients

  • Eggplant

    1 piece

  • Onion

    1 piece

  • Tomato

    2 piece

  • Greens

  • Spices

  • Chicken egg

    2 piece

  • Olive oil

    2 Tbsp

  • Black olives

To prepare the foods: onions, tomatoes, olives finely chopped; greens grind;

eggplant cut lengthwise into 2 pieces, brush with olive oil and bake in the oven for 20 min (180°C)

Carefully remove the core of the eggplant.

On a heated pan with oil, saute the onions, tomatoes (5-7 min.)

add the chopped core of the eggplant, season with salt and pepper, saute 2-3 mins, add the olives and herbs and put the stuffing in the eggplant halves.

In each do to deepen and to drive the eggs (one in each half).

Bake at 180°C for about 10 min.
