Honey bread
Based on "Pain d'epices". Lovers of honey and baking spices. Almost gluten free. In explanation of the recipe of the famous French pastry chef Christophe Felder. This recipe is one of the two options available on the website recipes.

Ingredients

  • Jam

    200 g

  • Honey

    275 g

  • Rice flour

    175 g

  • Starch

    25 g

  • Chicken egg

    2 piece

  • Leavening agent

  • Milk

    90 g

  • Salt

  • Butter

  • Star anise

    15 g

  • Cinnamon

    2 tsp

  • Cardamom

    15 g

  • Carnation

    15 g

  • Ginger

Rice "flour" I make myself at home in a coffee grinder to grind into flour Fig. Mix flour with starch and a pinch of salt.

The seeds of star anise, cloves crushed in a mortar. Add to flour mixture along with other spices.

Jam I have a home, from figs. Jam it is desirable to have orange, but if not, it can be any, but not berry.

Melt the honey, add jam (if the jam is pureed, then blend it in the mixer) and butter. Allow to cool slightly.

To flour mixture add the honey mixture, beat with a mixer. Add one egg and milk or yogurt. Mix well. The mixture should be liquid.

Form cake pan greased with butter and sprinkle rice flour.

Pour the mixture into the form and bake in preheated oven at temp. 170°C for one hour. Cupcake will be a dark brown color. Allow to cool in the form and then take it out.
