Vegetable ragout
Delicious summer dish. Can't go wrong, impossible to mess up!!!

Ingredients

  • Eggplant

    2 piece

  • Zucchini

    3 piece

  • Onion

    2 piece

  • Pepper

    2 piece

  • Tomato

    4 piece

  • Carrots

    4 piece

  • Greens

    1 coup

  • Garlic

    3 tooth

  • Spices

  • Vegetable oil

    0.5 cup

Cooking

All the vegetables cut into cubes whose side is 1 cm and fry in vegetable oil. Each vegetable separately. Onion fry for about 3-4 minutes, stirring occasionally. Put in separate pan.

Carrots grate on medium grater. Fry and put to the onions.

Pepper cut into cubes, fry for about 3 minutes.

Zucchini about 5-7 minutes.

Eggplant fry about 10-12 minutes. The skin is not removed.

Tomatoes fry few minutes.

All add to the pot, season with salt to taste and simmer for 45-50 minutes, stirring occasionally.

In the end, add the greens and garlic. Mix well and remove from heat. Cool and store in the refrigerator in a glass container.
