Description
This Riet of poultry (duck and chicken) - delicious. Delicate texture with small patches of bacon and Apple. Juniper berries give it a slight pine aroma. Preparing a bit troublesome, but the result is worth it. Perfect for morning toast and a slice of fresh bread.

Cooking
Duck cut into small pieces, immediately season with salt and pepper, add the finely-chopped rosemary and pour in the cognac.
Add the soy sauce. I took soy sauce Cccamp. Marinate all for 30-40 minutes.
Bacon also cut into small cubes.
Bacon strips, chopped medium-sized onions, clean the Apple peel and seeds, and also cut into small cubes.
Fry. First bacon, then onions (don't let it burn), and apples. Cool.
Chicken Breasts already cut into large chunks. Sent large pieces to the processor along with the bacon and grind in pulse mode. Not quite up to the condition of the paste must remain small pieces.
Add the apples, onion and bacon, even grind.
Melt in a saucepan the butter
Pour in the cream, bring to the boil and season with salt and pepper.
In the hot liquid, beat the eggs one at a time, stirring well. Allow it to thicken.
Juniper crush, the berries wrapped in a napkin.
Stir marinated pieces of duck, minced chicken, juniper cream sauce, which we cooked. All knead well and season with salt and pepper.
Put in clean jars or in a baking dish (in banks will be stored much longer). Spread on top of the pine nuts.
Cook in a water bath. In a deep baking pan pour hot water and put in banks (form)
Bake in a preheated 160 degree oven for 50 minutes. Close the lids. Bon appetit! Stored in the refrigerator for a month and a half.
