Cupcake with cereals, prunes and nuts
Evening tea is already a tradition in our family. Over a Cup of fragrant tea to share news, solve problems and enjoy each other's successes... but what is tea without scones! So my choice fell on a tasty and healthy muffin with oatmeal, prunes and nuts. The cake turns out very fragrant, with a rich flavor of prunes, moderately sweet, a little loose in structure...

Ingredients

  • Flour

    2 cup

  • Oat flakes

    1 cup

  • Sugar

    0.5 cup

  • Soda

    1 tsp

  • Chicken egg

    2 piece

  • Sour cream

    0.5 cup

  • Milk

    0.25 cup

  • Butter

    120 g

  • Cinnamon

    0.5 tsp

  • Prunes

    1 cup

  • Walnuts

    0.333 cup

Cooking

For the cake we need to mix the sifted flour with oatmeal.

Add in flour, sugar, baking powder and cinnamon. All stir well.

In the dry mixture add the softened butter. And RUB hands until fine crumbs.

In a separate bowl, whisk eggs, milk and sour cream. Pour this mixture into the flour and butter. Again mix thoroughly with a spoon or silicone spatula.

In the dough add the chopped prunes and chopped nuts. Nuts should be crushed so that you can feel the pieces – not very finely. All a good stir.

The form to lay baking paper and pour into it the dough.

Bake in the oven at 180* 45 minutes. If you need to cover 15 minutes before the end of baking, the muffin top baking paper.
