Festive cake
Fragrant, porous, delicate, airy cake that melts in your mouth with every bite! Use choux pastry in the recipe gives a unique touch, for sure it will become your favorite! The recipe for this dish was posted on the website in 2010 by a user there called "Custard cake", and is illustrated with me in the framework of "Coloring".

Ingredients

  • Flour

    6 cup

  • Milk

    1.5 cup

  • Yeast

    50 g

  • Yolk egg

    10 piece

  • Egg white

    3 cup

  • Sugar

    1 cup

  • Raisins

    150 g

  • Cognac

    50 g

  • Lemon peel

  • Cardamom

    1 tsp

  • Butter

    200 g

  • Vanilla sugar

This dough is made gradually, with intervals in which it must fit, otherwise it's a simple pastry. Make the dough: the Author proposes to take 0.5 cups of boiling milk and brew about half a Cup of flour, a wooden spoon, quickly knead the dough. But I suggest to take more milk, custard otherwise the dough will be very dense and mixed with other products will be difficult.

Dilute the fresh yeast in remaining warm milk, and let stand in a warm place 10-15 minutes.

Candied fruit and raisins, fill it with cognac. Leave to soak.

Combine the custard batter and yeast mixture, cover with a towel and put about an hour in a warm place to rise.

Separate the yolks from the whites.

RUB the yolks, sugar, vanilla sugar and salt - white.

Beat separately the whites to a froth.

In the ready dough and mix up all the whites and half the sugar-egg, 1.5 cups flour, knead well (I did it with a mixer, first on low speed, then increased). Put to rest the dough for another hour in the heat, covered with a towel.

Then add the remaining egg yolks with the sugar, 3.5 cups flour, the butter and knead until the dough will not lag behind hands.

Add spices (to taste), candied fruit, lemon zest, and allow dough to rise a little more.

Spread into molds, cover with a kitchen towel and leave for 10 minutes. Fill in the form about half the dough during baking will rise by half. Bake on medium heat for 45 minutes to 1.5 hours, depending on mass, check the readiness with a toothpick (should be dry).
