Adjapsandali
This dish of Georgian cuisine is prepared in countless variations. There are complex options, but there are simpler. I want to offer the option of making this amazingly flavorful dishes.

Ingredients

  • Potatoes

    3 piece

  • Eggplant

    2 piece

  • Onion

    1 piece

  • Tomato

    5 piece

  • Chili

    1 piece

  • Garlic

    3 tooth

  • Coriander

  • Khmeli-suneli

  • Black pepper

  • Parsley

    0.5 coup

  • Vegetable oil

Cooking

Cut the potatoes into cubes and fry in vegetable oil on heated pan.

When the potatoes become Golden, add the diced eggplant. Stir fry for 5-7 minutes and cover with lid.

Onion chop coarsely and add to potatoes and eggplant. Mix and cook under cover for about 7 minutes.

Tomatoes cut into quarters. Chop the garlic, grind the spices in a mortar.

Send the tomatoes, garlic, chilli and spices to the pan. Add salt and stir. Cook under cover for 5-7 minutes, stirring occasionally. Remove from the heat.

Greens chop, sprinkle adjapsandali and let stand under cover for 30 minutes.
