Salad
Found this recipe a couple of years ago in the magazine "Love to cook" (thanks to author). I hope You will like it too!

Ingredients

  • Eggplant

    2.5 kg

  • Sweet pepper

    8 piece

  • Tomato juice

    2.5 l

  • Chili

    1 piece

  • Garlic

    2 coup

  • Vegetable oil

    500 ml

  • Sugar

    200 g

  • Salt

    3 Tbsp

  • Vinegar

    200 ml

To prepare the products.

From tomatoes to make juice.

Bitter and sweet peppers grind into a puree.

To prepare the marinade: the juice, add the oil, salt and sugar. Bring to a boil and add the mashed pepper.

Meanwhile, cut the eggplant slices (if large, it half rings) at 3-4 cm.

When the marinade comes to a boil - lower the eggplant.

Boil for 10 minutes over medium heat and add the vinegar

And garlic.

Another 5 minutes to reduce to a minimum the fire, put in jars and pour the marinade!
