Zucchini for the winter tomato paste
Now zucchini season is in full swing. I offer you a simple and tasty salad with this wonderful vegetable.

Ingredients

  • Zucchini

    6 kg

  • Sugar

    1.5 cup

  • Sunflower oil

    1.5 cup

  • Vinegar

    1 cup

  • Salt

    2 Tbsp

  • Tomato paste

    2 can

  • Garlic

    200 g

  • Greens

    1 coup

  • Seasoning

    4 Tbsp

Cooking

The zucchini well washed and cut into cubes ( do not peel) is not of large magnitude. I used nicer-g and nozzle medium cubes.

Put in a pot + sugar, sunflower oil, vinegar, salt, tomato paste and seasoning in Korean.

Put on fire, bring to a boil and cook, stirring occasionally,1 hour.

After an hour, add 200 gr of garlic, (garlic finely chop or crush with a masher to garlic) and chopped greens. And cook for another 20 minutes. Unfortunately, my greens in the picture not included, got the camera.

Finish the salad, lay in sterilized jars, roll, turn and allow it to cool. You can still jar wrap. It is not a must. This is a photo of banks is visible greenery. Of this amount, ingredients obtained 12-13 bottles of half liter.

When I made another batch of these zucchini, I decided to add grated carrots. Added a"by eye". Approximately 1 kg of Everything else in the recipe.
