Vegetable salad with walnut meatballs
Clearly the case that this is not any meatballs because they are meat or fish, and the usual balls. But I do like salad (fresh vegetables, too) that is long in the family, the name stuck meatballs. And the salad is quite tasty, most importantly, there is scope for the imagination. Vegetables can be fresh, baked, grilled. Welcome!

Ingredients

  • Zucchini

    1 piece

  • Eggplant

    1 piece

  • Pepper

    1 piece

  • Green onions

    1 coup

  • Vegetable oil

    30 ml

  • Soy sauce

    1 Tbsp

  • Vinegar

    1 tsp

  • Thyme

    1 pinch

  • Salt

    2 tsp

  • Walnuts

    0.5 cup

  • Olive oil

    1 Tbsp

  • Soy sauce

    1 Tbsp

  • Lemon juice

    1 Tbsp

  • Garlic

    1 tooth

  • Green onions

    4 sprig

Eggplant cut into slices, to prisolit and leave for 20 minutes to remove bitterness. Then the salt is washed off, slices to dry out.

Squash or zucchini cut into slices

Pepper free from seeds and white membranes, cut into segments.

Vegetables can be baked in the oven, fry on the pan. I used the grill only because the heat the oven is hot, the pan will need a lot of oil. Zucchini lightly drizzle with vegetable oil.

Mix vegetable, ideally olive oil sauce marinade Teriyaki, or just with soy sauce.

Hot vegetables dipped in marinade, stir and leave to cool, can longer.

For nut "frikadelle" punching in a blender with the walnuts, green onions (greens can take any favorite) and garlic, add the oil, lemon juice and soy sauce, mix until smooth.

On dish put cold vegetables randomly on top to put the nut balls. Sprinkle with chopped green onions or any greens.

Tasty and just like that, with bread, good meat.
