Cream of cauliflower soup with Apple and blue cheese
A simple and delicious soup. Apple gives a gentle acidity and freshness, and the cheese is a light sharpness. Help yourself!

Ingredients

  • Cauliflower

    1 plug

  • Broth

    700 ml

  • Onion

    1 piece

  • Apple

    1 piece

  • Garlic

    2 tooth

  • Butter

    2 Tbsp

  • Nutmeg

    1 pinch

  • Cream

    200 g

  • Blue cheese

  • Salt

  • Black pepper

Cooking

The onion and garlic, crumble and fry in butter three minutes.

Cauliflower disassemble on inflorescences and add to the onions, season with nutmeg and cook for another five minutes. Then pour the broth and cook for 30 minutes on low heat.

Add the cream, but do not boil, allow the cream to warm up. Season with salt and pepper.

In a blender, blend the soup until smooth.
