Cooking
Peel the pears from the skin, leaving the wand core.
Slice the lemon and ginger into thin slices.
Place pears in a large saucepan. Add honey, lemon, ginger, cloves, cinnamon, sugar, pour water to cover the pears. Bring to boil and cook on low heat for 35-45 minutes, until the pears are soft. Remove from heat, cool pears in syrup.
Prepare the cream. To the yolks add the sugar.
Beat the egg yolks with sugar and vanilla white.
Stirring constantly, pour a trickle of warm cream into the beaten egg yolks.
Mixing, bring the cream to a simmer on the quiet fire. Remove from heat, pass through a sieve and cool.

Place the bowl in a water bath and melt the chocolate.
