Eggplant in tomato marinade
This recipe peeked my neighbor in one of the culinary programs. A quick and delicious dish of eggplant, which can be an excellent appetizer or side dish to meat dishes.

Ingredients

  • Salt

    0.5 tsp

  • Sugar

    0.5 tsp

  • Vinegar

    2 Tbsp

  • Onion

    1 piece

  • Greens

    1 coup

  • Tomato

    4 piece

  • Garlic

    8 tooth

  • Eggplant

    2 piece

  • Black pepper

Cooking

Eggplant peel and cut into strips 1 cm thick, Sprinkle with salt and leave for 30 minutes.

Tomatoes to RUB on a grater and simmer over low heat for 15 minutes, adding 1/2 teaspoon sugar, 1/2 teaspoon salt and 1 tablespoon vinegar.

Onions and greens finely chop, squeeze the garlic, mix well.

Eggplant spread on pan in a single layer and roast until tender.

In a container for marinating lay the eggplant, add 1 tablespoon of vinegar.

On top of onions, herbs and garlic

mix everything. Salt, pepper to taste.

On top pour the tomato sauce.

Leave to marinate for 3 hours. After 3 hours, a great snack is ready. Bon appetit!
