Potato and pumpkin vegetable eintopf with mushrooms and white beans
Eintopf (Eintopf) - a dish that literally translates "all in one pot." Eintopf something similar to a thick soup, rice, stews or roast, when it is gradually added to one pot or pan and brought to readiness. Here rather the contrary: prepare all the components separately, and at the end, mix the components and flavors of the "pot" together. All served, of course, "in one pot"! This simple dish uses a different technology, an interesting combination, but the result is what is called - just "yum"! And after 2-3 days storage in the fridge and warming, eintopf remains as tasty as freshly cooked...

White beans soak overnight in cold water, and then boil until tender (1-1. 5 hours) with herbs: 2-3 sprigs of parsley, thyme, sage, Bay leaf. Do NOT add salt!!!

The vegetable broth. I always cook it from pieces of root crops, vegetables and herbs, it always turns out different, but always delicious. To 1 liter of water in about such proportion. A couple of cabbage leaves (or stalks, trimming), roots (parsley, parsnip), onion (leek or onion), carrot, celery, Bay leaf, 2 tomato (canned or fresh), 1-2 cloves, pepper, any herbs to taste (thyme, rosemary, etc.) bring to boil, reduce the heat to low and simmer for 20 minutes. Remove sauteed mushrooms in a separate bowl, add to the pan the remaining oil and fry it from all sides of the potatoes until it will turn brown.

Then add onions and crushed garlic. Fry all together until transparent bow.

Dissolve in water, white wine vinegar and add to the pan, allow to evaporate.

Finally starting to unite our eintopf. To shift the contents of the pan into a large pot or pan with non-stick coating (no plastic parts). Add prepared white beans, pumpkin, roasted mushrooms, canned tomatoes (pieces), fresh sprigs of sage and green onions. Pour the prepared vegetable sauce. Cover with a lid. Bring to readiness in the oven.
