My dear husband loved the roasted ears in restaurants. They are not cheap, and I decided to try to cook at home, there was all very simply!!! For fans I recommend!!! It is very tasty.

Cooking
Pig ears are well cleaned, wash and cut in half. Then boil in plenty of water. Cook for long time - 2-3 hours on low heat with cloves, salt, pepper and quartered onion.
Ready ears to cool and cut into thin strips. Put in a baking dish.
To make the sauce. Melt the butter, add the flour and stir well with a spatula. A thin stream pour the milk, stirring well to avoid lumps. Salt and pepper to taste, add the mustard. Bring to the boil, stirring well, sauce should thicken. Ready sauce to fill my ears and send in the oven at t=180 degrees for 30 minutes.
Ears ready. To serve both cold and hot.
