Ingredients

  • Pearl barley

    200 g

  • Tomato

    0.5 piece

  • Pepper

    0.5 piece

  • Cilantro

    1 coup

  • Radishes

    5 piece

  • Green onions

    1 coup

  • Garlic

    2 tooth

  • Olive oil

    3 Tbsp

  • Salt

  • Allspice

Necessary for the salad ingredients. The first thing to do is to cook pearl barley. It took me 1 hour, this is the longest phase in the preparation of this salad. Now, pour the pearl barley with cold water, bring to boil, drain the water, rinse the groats. Back into the saucepan again, cover with water, bring to a boil. Lower the heat to low and simmer until tender. Barley has turned out crumbly and not sticky. Allow it to cool down.

Now the salad dressing. Finely chop the cilantro stalks.

Put them in a mortar, add the chopped garlic, a pinch of salt, 2 tbsp olive oil and carefully triturated. The aroma was, I must see, breathtaking!

Spread the filling in ready, warm barley and mix thoroughly so that each seed was covered with a fragrant dressing.

Now slice the radishes, bell pepper, tomato - all diced about the same size, green onion. Add this beauty to the pearl barley and stir.

Season with pepper, taste for salt, if needed add a little more, add 1 tbsp olive oil and stir.
