The cooks! Publish my first recipe. Please do not judge strictly:) the Recipe came up with myself, although, I must admit that on eyes came across a few similar dishes, but with very different ingredients. So I picked up a little from everywhere and came up with your own:). Hope you like it. Easy roll, perfect for summer evenings or for festive table, served cold.

Cooking
Wash, peel and thinly slice the eggplant into long strips (approximately 5 mm thick)
Fry the eggplant in oil. Eggplant absorbs a lot of oil, so that the roll has not turned out very greasy, I used a grill pan and tried to use as less oil. Anyway, it is better to leave some time for the fried eggplant on paper, so that the excess oil glass.
Separately, prepare the remaining ingredients. Goat cheese and pepper (I took ready at the Bank). Cheese to grind with a fork until smooth.

Now assemble the roll. Spread on the table, clear plastic tape, placed along the eggplant to one slightly covering the other.
Then put the pepper down the middle and hummus.
And turn into a roll using plastic film. Put them in the cold a half-hour.
Take out, cut into pieces and laid on a dish. Bon appetit!
