Double layered mousse of pumpkin and yogurt
Easy to prepare, but delicious and impressive dessert in which mousse with hints of cinnamon and lemon goes perfectly with the crunchy pumpkin cookies! And, of course, cookie recipe! Invite the guests!

Ingredients

  • Puree vegetables

    370 g

  • Yogurt

    250 g

  • Sugar

    30 g

  • Powdered sugar

    180 g

  • Flour

    150 g

  • Cinnamon

    0.25 tsp

  • Lemon peel

    0.5 tsp

  • Butter

    75 g

  • Glucose

    100 g

  • Gelatin

    6 g

You can use ready-made mashed potatoes. I cooked the pumpkin myself (in a slow cooker for a couple), and then struck her with a blender.

A layer of pumpkin puree: Soak 3 g of gelatine in cold water. In puree 150 g, add sugar and cinnamon, mix well.

Cookies with pumpkin puree: Lightly heat the glucose (or invert syrup, the link I give below), and connect it with pumpkin puree 120 g. Mix well. Add the flour sifted with the icing sugar 150 g and again mix well. Add the melted butter and stir. It turns out that kind of dough. PS suggest to reduce to flour by 30-40 g, then it is better to add after baking tests.

From this dough you can bake cookies any size. Since I have it for decoration, I laid out the dough the size of a hazelnut...

... and then thinly spread it with a spatula. I advise you not to bake a great number cookies at a time. The cookies harden very quickly, although it can "warm up", by placing a couple of seconds in the oven (this is in case the liver you shape). Bake in pre-heated to 190"C oven for 3-4 minutes. Baking time depends on thickness of dough and the characteristics of your oven.

I gave the liver the shape of a flower. Quickly removed one from the pan and counted to three so cooled slightly, and then gave him the form. Store the cookies in a closed container at room temperature. If you use all the dough, you can freeze and bake the cookies when you need.

From this dough you can bake the pastry. Bake a circle of the desired size, give cool slightly and throw the inverted glass giving a hand shape. Allow to cool.

Baskets can be filled with fruit or ice cream, but just before serving.
