Salad of quinoa with eggplant
Bright, beautiful, with an unusual taste of salad! To cook it easy, fast and fun)) healthy and tasty, it is a wonderful place to post :)

Ingredients

  • Quinoa

    0.5 cup

  • Eggplant

    1 piece

  • Garnet

    0.5 piece

  • Pine nuts

    1 handful

  • Vegetable oil

    3 Tbsp

  • Salt

  • The mixture of peppers

  • Dill

Cooking

Quinoa is boiled in salted water, looking at the cooking instructions on the package and cool.

Eggplant wash, finely chop.

Fry in small amount of vegetable oil. Salt, pepper to taste and leave to cool.

Parse pomegranate seeds.

Pine nuts, fry until Golden.

Combine quinoa, eggplant, pomegranate and beans. Try the taste and add what's missing (salt, pepper). Enough vegetable oil from fried eggplant, but if someone seems a little, you can add a salad for another 1st. L.

Finish the salad, sprinkle with pine nuts and herbs.
