Salad with beets and chickpeas
Delicious, quite hearty and very beautiful salad. My husband taste it, and said that the salad reminds him of something southern, summer vacation.

Ingredients

  • Beets

    6 piece

  • Olive oil

    1 Tbsp

  • Vinegar

    1 Tbsp

  • Mustard

    0.25 tsp

  • Garlic

    1 tooth

  • Spinach

    100 g

  • Chickpeas

    350 g

  • Red onion

    1 piece

  • Cheese

    100 g

For the filling: in a small jar closed with a lid, combine oil, vinegar, mustard and garlic. Close the lid and shake so that all ingredients are well mixed. Leave at least 15 minutes.

Beets, pre-boiled or baked, peel and cut into small slices.

In a large bowl, combine the spinach (if leaves are too large, tear them), chickpeas and onions. Add the filling, after having pulled out of her garlic. Mix.

Arrange salad on plates. Then put the beets and crumble cheese. Pepper, salt. Serve immediately.
