Sabayon
A very delicate dessert... moderately sweet, with a great citrus flavor.

Ingredients

  • Orange

    3 piece

  • Sugar

    70 g

  • Lemon

    1 piece

  • Chicken egg

    2 piece

  • Yolk egg

    2 piece

  • Butter

    30 g

As usual, prepare your ingredients )))

Squeeze of lemon juice. In a bowl put the eggs, yolks and sugar.

Carefully whisk about 2 minutes. When the mixture is smooth, put the bowl in a water bath with boiling water, continuing to whisk for ~ 2 minutes. You should get a thick foam.

Without removing from the water bath, add to egg mixture 1/3 lemon juice, continuing to beat (~ 1 minute). And so 2 more times. After adding all of the juice and beat for another 8 minutes (water bath). It turns out to be cream.

Remove from the water bath and immediately add the butter. Mix thoroughly.

Allow the Sabayon to cool slightly. Meanwhile, peel the oranges peeled, partitions and divide into pieces.

Orange slices decompose equal parts of 3 ice cream dish, top evenly distribute the cream. Served warm!!!
