Probably, every housewife ever watched any cooking show, especially because now they can boast of each channel. I don't really like such programs, so seeing a bit of the show "Master Chef", I wanted to repeat just a few of the recipes. One of them - "Sauteed eggplant" from the Elmira Mardan. This dish is familiar to me, but in this recipe is the highlight. Preparation saute will take time, but the result is worth it.

Cooking
Eggplant and cut in slices.
To out the bitterness, fill the eggplant for 30-40 minutes in salt water.
The water is drained, the eggplant a little squeeze and fry in vegetable oil.
Two medium onions cut into half rings and fry until soft in vegetable oil. You can take a deep frying pan or saucepan (I used Kazanka).
To the onions add the carrots and simmer (I covered) for 5 minutes.
Pepper also cut into half rings and add to the onions and carrots, simmer until cooked peppers.
Tomato peel: make a cruciate incision on the top, we scald with boiling water (I filled in for a couple of minutes) and remove the skin.
When peppers are soft, add the vegetables roughly chopped tomatoes and simmer for another 15 minutes.
Greens wash, dry and chop. The original recipe used cilantro. But as in nearby shops I didn't find it, decided to replace the parsley. Many do not like the smell and taste of cilantro, so I can do what I do.
When the vegetables are ready, turn off the stove and add in the gravy herbs and garlic, allow to infuse for 10 minutes
This step - difference cell from the Elmira Mardian from the usual. On a large plate or platter spread a layer of eggplant, then a layer of gravy, and so 3-4 times.
I did three layers. So eggplant soaked in vegetable sauce, are juicy.
