Cooking
Cut from the eggplant in small pieces and fry in deep fat. Spread on a napkin.
Make a sauce of mayonnaise. First it should be very well mixed, as the seeds fall down and the top of the tahini liquid. Mix, 5 tbsp. of put in a small plate, there add salt, juice of half a lemon, a clove of garlic. Mixed, better whisk. Now add water (3-4 tbsp). Tahini behaves in a strange way: first when you add water, it separates, but then thickens when it is mixed thoroughly. Have achieved the desired consistency and the sauce is ready.
Take 3 slices of bread (Sabah can be prepared with pita bread, but you can with the usual grain bread; I prefer bread). Grease each piece tahini.
The next stage is the eggplant. Spread on the sauce, and sprinkle with salt. The top ring of sweet red onion.
Cover with a second piece of bread with the tahini from the back side (tahini everywhere :) ) and egg! A ring of onion... and cover with last piece of bread.
