Juicy chicken fillet with vegetables
I want to introduce you to another of my favorite family dishes of chicken, where the main role is given to chicken, which are surprisingly delicious and juicy, and as a garnish use zucchini, eggplant and tomatoes! Highly recommend - try it!

Ingredients

  • Chicken fillet

    1 kg

  • Zucchini

    400 g

  • Eggplant

    400 g

  • Red onion

    200 g

  • Tomato

    300 g

  • Cherry tomatoes

    200 g

  • Pepper

    300 g

  • Garlic

    4 tooth

  • Parsley

    4 Tbsp

  • Olive oil

    5 Tbsp

  • Tomato juice

    150 ml

  • Soy sauce

    4 Tbsp

  • Salt

Chicken fillet cut into large chunks, add Tabasco sauce or paprika, 1 tbsp olive oil, soy sauce and mix well. Leave at room temperature until you prepare the vegetables.

Zucchini and eggplant, depending on size, cut into washers or palusible.

Pepper cut into strips, onion - half rings.

Place all the vegetables in a heat proof form, add sliced tomatoes, chopped garlic and parsley.

Season with salt to taste, add the cherry tomatoes cut into 2 or 4 pieces, and butter 4 tbsp, mix well. Bake in pre-heated to 220"C oven until you prepare the chicken. Be guided by your oven!

The pan well to heat and fry the chicken for 2-3 minutes, so the meat was "sealed", in this case, the fillets will turn out very juicy.

Add the fillets to the vegetables, pour juice and bake in the oven at a temperature of 190" C for 20 minutes. Be guided by your oven!
