Adobo eggplant
Adobo is a popular dish in Filipino cuisine. Cook it with meat, but there are fish and vegetable options. I present to You one of the options - adobo eggplant. Delicious, simple and incredibly satisfying dish. Perfect for those who are Fasting.

Ingredients

  • Eggplant

    2 piece

  • Garlic

    4 tooth

  • Soy sauce

    4 Tbsp

  • Vinegar

    2 Tbsp

  • Vegetable oil

    3 Tbsp

  • Salt

    1 tsp

  • Allspice

    1 tsp

Cooking

My eggplant and peeled.

Cut them in large cubes.

Put in container, sprinkle with salt. Stir and leave for 20 minutes.

Then wash with cold water. Give water to drain.

Put on a towel, dry it.

Garlic cut.

In frying pan, pour vegetable oil and fry the eggplants over high heat until it will turn brown. Spread at will in a colander to allow to drain the excess oil.

On a heated pan put the garlic, add vinegar, soy sauce, Kikkoman. Add the peppers. Vinegar can be any rice, plain or as I have Apple.

Bring to a boil, proverjaem on low heat for 5 minutes.

Then add the eggplant and keep on heat for another 5 minutes, stirring occasionally. Served in a salad bowl. I recommend to serve this dish warm bread "plates". It turns out very tasty and juicy. I recommend this dish.
