Eggplant is good in many dishes, and in company with cheese they are all beautiful! If you are partial to this combination, this tasty hot snack you will certainly have to taste.

Eggplant peel and slice lengthwise into thin slices, pour with salt and let stand for 15 minutes.
Then drain the liquid and blot the eggplant with paper towels.
The prepared slices and fry the slices in olive oil (I prefer to bake, coat the slices with olive oil).

Wrap the edges of the eggplant to make the envelope.
In the same way prepare the remaining slices. Envelopes ready to go in the fridge for 20-30 minutes.
Then put them under the grill for 5 minutes.
Hot envelopes spread on a dish, drizzle with olive oil and lemon juice, sprinkle the top with Basil and pine nuts. Serve immediately. Bon appetit!
