Eggplant with Maghreb
The best kitchen is a kitchen with MARBA. A simple and delicious salad, without mayonnaise.

Ingredients

  • Eggplant

    2 piece

  • Carrots

    1 piece

  • Onion

  • Tomato

  • Parsley

  • Lemon

  • Black pepper

Hands and vegetables thoroughly wash

eggplants cut large enough, salt them with coarse salt and let rest

peppers annealing on gas (put in a plastic bag or box with a tight lid to let them sweat), as an option to cut and fry. Allow to cool and peel.

rinse the eggplant with salt and fry in vegetable oil,then add chopped carrot

allow to cool and drain excess oil from the eggplant, chop the onion, parsley, tomatoes and lemon zest, add the eggplant and season with lemon juice, salt and pepper to taste. BON APPETIT!
