On Monday, our family fasts, so I offer you a recipe very tasty and hearty bean salad with roasted vegetables. A spicy salad will give pickles. Let's start...

Ingredients

  • Beans

    4 cup

  • Beets

    4 piece

  • Carrots

    3 piece

  • Pepper

    2 piece

  • Green onions

    3 piece

  • Pickled cucumber

    3 piece

  • Salt

  • Olive oil

    3 Tbsp

Turned out three envelopes, which we send into the oven at 180 degrees for an hour. (Peppers take out after 40 minutes.)

Clean the vegetables from the skin

Cut them as for the vinaigrette (I cut larger) and place in a bowl. There cut pickles. I used cucumbers from my previous recipe.

Chop green onions and add to the vegetables.

Then add kidney beans. Since I cook the beans myself, the quantity was measured by glass.

Sprinkle with salt and add olive oil. Mix everything together
