I want to offer another version of the eggplant in the marinade. This recipe can generally be called "Eggplant without the hassle".


  • Eggplant

  • Water

    1 l

  • Sugar

    2 Tbsp

  • Salt

    2 Tbsp

  • Vinegar

    100 ml

  • Black pepper

    0.333 tsp


Eggplant wash, trim two sides and pierce in several places.. In a pot of boiling water, drop the whole eggplant and boil for 5 minutes.
Then put eggplant in a colander and put on top of oppression. Drain off the liquid. I used a pot of water in which the cooked eggplant. Cool the eggplant is not necessary.
In a saucepan, prepare the marinade. Bring to a boil.
If you have eggplant as a whole do not fit into the jar (as I have), you can cut them in half.
In sterilized jars to put hot eggplant, pour boiling marinade and roll covers. Banks to turn, wrap and leave until cool.
