Cooking
1 egg divided into whites and yolks. First make the filling: cottage cheese, 1 egg yolk, 1 tbsp sugar, 2 tsp starch and liqueur (orange, I didn't have, took Fig) - all mix until a homogeneous mass.
Next make the batter: chocolate RUB on a grater (any dark - the higher the percentage of cocoa the better)
Add to chocolate all dry ingredients: sugar, starch, almonds, flour, cocoa, salt, baking powder and soda (this is not a bug, soda taste will be!). Mixed. Then add all "wet" products: 3 eggs + 1 protein, vegetable oil and cold wine. All are thoroughly mixed until a homogeneous, quite liquid dough.
Turn on the oven at 180*C. In the muffin better to invest in "the cuff", if not - very well grease the ramekins with butter and sprinkle with flour (in the dough is almost no oil, so it sticks to the form). Pour into the ramekins 1 tablespoon of dough, put 1/2 teaspoon cottage cheese filling on top and pour another 1-1. 5 tbsp of dough, enclosing the filling. For me, the toppings can be a little more, ie make a double portion and put 1 tsp. in the finished muffin, it resembles a thick pudding. Bake the first 5 minutes at 180*C, then reduce temperature to 160*C and bake 20 minutes.
I got 24 of the muffin, from the second portion when baking has turned out here such ridiculous popochki.
The finished cupcake sprinkle with powdered sugar.
