Caviar from roasted eggplant with apricots
The recipe is simple, will not take much time to prepare and will delight your taste.

Ingredients

  • Eggplant

    2 piece

  • Apricot

    250 g

  • Onion

    1 piece

  • Garlic

    3 tooth

  • Greens

    1 coup

  • Sesame

    3 Tbsp

  • Chicken fillet

    350 g

  • Soy sauce

    2 tsp

  • Vinegar

    1 tsp

  • Ketchup

    4 Tbsp

  • Mustard

  • Ginger

    1 Tbsp

Mix the ketchup, mustard, soy sauce. Mix well.

I used soy sauce from Blue Dragon. Marinate chicken in the prepared sauce.

While fillet is marinated, one can prepare caviar. Eggplant cut lengthwise into 2 parts, put on a baking sheet lined with foil in the grill mode and bake 15 minutes. Cool slightly, remove flesh, cut into medium cubes.

Apricots remove bones, cut into medium cubes.

Onion cut into half rings, garlic petals, ginger root, peel and grate on a medium grater.

In vegetable oil fry the onion, garlic, ginger, add the apricots and balsamic vinegar. All together, simmer 5 minutes.

Add eggplant and simmer for another 5-7 minutes, at the end add chopped cilantro and sesame seeds (I lightly fried on a dry pan)

Skewered strips of chicken in waves on wooden skewers, sprinkled with sesame seeds. To fry on the coals or in the oven on the grill at 200 g for 15 minutes.

Serve the hot meat with caviar.
