In a large bowl, mix the flour, sugar, salt, baking powder, orange zest, then add the butter(cold), rubbed through a grater or chopped with a knife into fine crumbs.
Add the cottage cheese. Gently stir so that the cheese and butter evenly distributed in the dough. The dough is not knead, it should be lumpy but not sticky and should not be dry.
Gather the dough with your hands into a ball, lay on the table and generate bar, divide it into 4 parts. Each piece is hand flatten into a disk, wrap in cling film and send ("think" somewhere I came across this phrase) in the fridge for more than an hour.
While the dough cools, make the filling.
In blender, grind cranberries and orange, the weight should be in small pieces. Put everything in a saucepan, add sugar, honey and cook over medium heat. I added to the end of cooking, a little starch, the mass to be thicker. Cool completely.
For nut filling, chop into small pieces walnuts, dried cranberries and sugar.
Pulling out one part of the dough from the refrigerator, roll it into a circle.
A circle divided into 8 parts. Then dough to grease with a thin layer of cranberry filling.
Sprinkle walnut filling and slightly press it with your hand.
Put the bagels on parchment paper lined baking sheet and refrigerate for 30 minutes - the dough should be well cool. Before baking grease with egg and sprinkled with sugar.
Bake in preheated oven for 20-25 minutes at T-190 deg. Cool on baking sheet 5 minutes, then place on the grill until cool. Sprinkle with powdered sugar.
